The Wine

Yield control, about 65 hl/ha, allows a terroir-based expression Sauvignon Blanc. Rigorous optimal maturity preserves the aromatic character of the grapes. The alcoholic fermentation is performed in between 62°F to 68°F and lasts about 3 to 4 weeks. To preserve the freshness of the fermentation’s aromas there is no malolactic fermentation. Three to four months on the fine lees gives more structure to the wine and help it ages well. The wine is then stored in stainless steel tanks with temperature control (55°F) until bottling.

Tasting Notes

Clear pale straw colour; citrus, grass, gooseberry and light mineral aromas; dry, light body; fruit and citrus flavours with balanced acidity. Delicious with salads, seafood and goat’s milk cheese.
