Lo SPARVIERA Franciacorta DOCG Cuvee No. 7 Brut
Franciacorta is Italy’s answer to Champagne! The focus is on quality and the production method and style is traditional. After harvest, small crates of Chardonnay are left overnight in a refrigerated room. The whole clusters are then pressed to obtain a 60% yield. The first-pressing rests refrigerated for 24 hours to foster clarification and lysis of aromas. Slow fermentation takes place at 16°C to preserve aromas. The wine is aged on the lees for about 7 months in stainless steel tanks and bottle fermentation follows in May. To complete the wine its held for 30 months of bottle-ageing sur lie, giving the wine a richer, fuller body.
The local limestone-clay soils are ideal for sparkling wines made in the traditional method of Champagne, such as this one made with Chardonnay. It shows pretty lemon, peach and baked apple notes with touches of toast, smoke and flowers. Exceptional value. (Vintages panel, July 2016)
Azienda Lo Sparviere, the wine estate owned by the Gussalli Beretta family (of Gunmaker Fame). The property in Monticelli Brusati covers 60 hectares, of which 25 are planted to Chardonnay and Pinot noir. The original cellar building dates back to the 16th century, and owes its name to the hawk that appears on the coat-of-arms gracing the fireplace in the main hall.
